Fruit Tart recipe

It is time for our second delicious but easy-to-prepare dessert; it is time for Fruit tart with baked almond & vanilla cream! This is a perfect dessert for any time of day and night 😊 as it is not too sweet but still sweet enough to make us happy 😊 and it is one of the most famous desserts from Martinis Marchi Restaurant.

If you plan to go on a family trip in nature during these isolation days or prepare a basket of goodies for your parents or friends, a slice of this fruit tart will sparkle everybody’s day. 


Crisp pastry - Ingredients:

150 g butter

95 g powdered sugar

30 g almond flour

1 g salt

58 g eggs

250 g flour



Soften butter at room temperature.

Whisk the sugar, salt and almond flour into the softened butter.

Add one egg at a time to the mixture with stirring.

Stir until ingredients are combined.

Add the flour and continue stirring until the mixture is united.

Refrigerate for 4 hours


Custard - Ingredients:

300 g milk

3 egg yolks

75g sugar crystal

15g flour

15g corn starch (Gustin)

Vanilla flavour

Vanilla stick



Foam the egg yolks with sugar. Add flour and cornstarch and mix well until combined.

Add the vanilla aroma and the vanilla bean seeds to the milk and heat to a light yellow colour.

Heat on fire, being careful not to boil (it must not boil - keep at temperature to stream, not boil).

Add some of the milk to the kettle with the egg yolk and mix thoroughly. Add the rest of the milk and continue to cook until the cream is smooth and tight.

Pour the cream into the pan and protect it with nylon foil to avoid the formation of a dark surface layer.


Almond cream - Ingredients:

75 g butter

75g crystal sugar

75g eggs



Mix butter at room temperature with sugar to a foamy mixture.

Add almond flour, and mix.

Add the eggs several times until the mixture is combined.

If desired, flavoured with orange peel, lemon...

Cool the mixture.



Coat the mold with the dough from the refrigerator and bake in a preheated oven at 160 degrees, for about 17-20 minutes.

While baking the dough, combine 50g of egg yolk with 15g of sweet cream. With the resulting mixture, coat the baked dough and continue baking for another 8-10 minutes.

Then add almond cream to the dough mold and bake for another 10 minutes.


Mix the vanilla cream to soften it and fill it with cooled dough in the mold.


We decorate with fresh forest fruits, strawberries or other seasonal fruit!
